Chocolate Melting Moments With Peppermint Cream

Ingredients
  • 250 grams Butter, softened
  • 75 grams icing sugar, sifted
  • 1 teaspoon vanilla essence
  • 270 grams Self Raising Flour, sifted
  • 50 grams Good Quality Cocoa Powder, sifted
  • 90 grams butter
  • 75 grams icing sugar, sifted
  • ½ teaspoon Peppermint Essence, or to taste
  • Green Food Colouring (or spinach juice)
  • milk, if required
Instructions
  1. Pre-heat oven to 180 degrees celcius.
  2. Place butter, icing sugar and vanilla in bowl and mix for 30 seconds on speed 4.
  3. Scrape down bowl and mix for a further 30 seconds on speed 4.
  4. Add flour and cocoa and and mix for 15 seconds on speed 4.
  5. Scrape down bowl and mix for a further 15 seconds on speed 4.
  6. Refrigerate mixture for 15 mins.
  7. Roll into walnut sized balls, place on a lined baking tray and press each ball with a fork. Alternatively you can roll mixture into a log and slice into rounds.
  8. Bake for 12 - 15 mins.
  9. Place butter into bowl and mix for 30 seconds on speed 4 - 5.
  10. Scrape down bowl and mix for a further 30 seconds on speed 4 - 5.
  11. Add icing sugar, essence and food colouring and mix for 15 seconds on speed 4 - 5.
  12. Scrape down bowl and mix for a further a 15 seconds on speed 4 - 5.
  13. Depending on the consistency you may need to add more icing sugar if too runny or a little milk if too stiff.
  14. When biscuits are cold, fill with peppermint cream
