Damp Almond Cake

Almonds are quite revered in many cultures and religions for instance in Middle Eastern Countries it symbolizes the wakening of creation. I thought an almond cake would be a great way to celebrate Easter with family and friends.
Ingredients
  • 125g butter
  • 190g or 1 cup sugar
  • 100g almonds/almond meal or 1 cup ground almonds
  • 1 tsp almond essence
  • 3 eggs, beaten
  • 25 g or ¼ cup self raising flour (works well with gluten free flour)
Instructions
  1. Preheat oven to 175 degrees celcius.
  2. Line a 20cm cake tin.
  3. Add almonds to TM bowl and grind on speed 9 for 10 seconds. Set aside.
  4. Insert butterfly. Add butter and sugar and cream on 50 degrees celcius, speed 3 for 30 seconds or until pale and fluffy. Scrape and repeat if necessary.
  5. Add ground almonds, almond essence, eggs and flour. Mix on speed 4 for 30 seconds
  6. Cook for 30 - 40 mins until cake springs back to the touch, has shrunk away from the sides of the tin and a skewer tests clean.
  7. Serve with cream.
  8. Serves 8-10.

  11. Cream butter and sugar until pale and fluffy.
  12. Add ground almonds, almond essence, beaten eggs and flour. Mix until well combined.
  13. Cook for approximately 30 - 40 mins until cake springs back to the touch, has shrunk away from the sides of the tin and a skewer tests clean.
  14. Serve with cream.
  15. Serves 8-10.
