Nutty Raspberry Frozen Pie

We always have frozen fruit in the freezer to use in sorbets, ice creams, smoothies etc but if you don't already...pop three bananas and some raspberries in the freezer the night before.

You need a bit of freezing and soaking time up your sleeve too but it is worth the organisational effort...it's probably just not a recipe you'd make on a whim.
Thermomix and non-Thermomix recipe...where you see TM bowl, we mean the bowl of your appliance.

Where you see speed 9, use the fastest setting on your appliance.
Ingredients

  • Crust is:
  • 50g (1/2 cup) pistachios
  • 65g (1/2 cup) almonds
  • 50g (1/2 cup) sunflower seeds
  • 4 dates, soaked for 1 hour
    Filling is:
  • 2 bananas
  • 210g (11/2 – 2 cups) frozen raspberries
  • 45g (2 Tbs) honey or ⅓ to ½ cup soaked raisins
    Frosting is:
  • ½ cup macadamias, soaked for 2 hours
  • 3 frozen bananas
  • ½ tsp vanilla powder (ground vanilla bean), we used vanilla essence
  • 1 Tbs of coconut cream (optional)
Instructions
  1. Place all the crust ingredients into the TM bowl and blend on speed 9 for 10 seconds. or until it resembles a crumb consistency.
  2. Press ¾ of the crumb mix (reserving ¼ for sprinkling) evenly into the base of a pie dish. Your upturned MC from the Thermomix makes this very easy.
  3. Pop it into the freezer whilst you prepare the filling.
  4. Place all the filling ingredients into the TM bowl and blend on speed 9 for 10 seconds.
  5. Scrape down the sides and repeat until smooth.
  6. Spread the filling evenly over the crust and sprinkle over the reserved crumb.
  7. Pop it back in the freezer until the filling is firm.
  8. Place all the frosting ingredients in the TM bowl and blend on speed 9 for 10 seconds.
  9. We added the coconut cream at this point to thin out the mixture a bit so it was easier to spread.
  10. Scrape down the sides and repeat until smooth.
  11. Carefully spread the frosting over the filling. This was best done with a palette knife or spoon that was heated in hot water. It was very easy to lift off the crumb layer.
  12. Pop it in the freezer for a few hours to firm up.
  13. You can take the whole pie out to thaw for 10 mins before serving or cut off a slice while still frozen to enjoy as you like.
Notes
You will need raw coconut cream if you're sticking to the raw and paleo principles....we diverged from them at this point, as we just happened to have a regular tin of coconut cream in the fridge.
Vanilla essence isn't considered a raw food item.

    Love the look of this guys – just need to check which ingredients are for which layer as you say “Place all the crust ingredients” but in the ingredient list you don’t divide them up?
    I guessed crust is : 50g (1/2 cup) pistachios, 65g (1/2 cup) almonds

      Looks like a new update has killed most of our recipes, yikes!!

      You guessed almost right the instructions are as follows:
