These biscuits are gluten free (in fact completely flourless!) and can be egg free and dairy free too! Regardless of the modifications, they are our favourite choc chip biscuit...full of flavour, crunchy on the outside and slightly chewy on the inside. If we're honest...we like them best with the chia seeds instead of the egg. Divine!
  • 200g raw almonds (or 200g almond meal)
  • 30g oil of your choice (we like macadamia)
  • ¾ cup rapadura (or coconut palm sugar or brown sugar)
  • 1 egg (or 1 tablespoon of chia seeds soaked in 3 tablespoons of water for 10 mins)
  • ½ tsp baking soda
  • ¼ tsp sea salt flakes
  • 90g good quality dark chocolate (in small pieces or bits...dairy free if you like)
  1. Preheat oven to 180 degrees Celcius and cover a baking tray with baking paper or a silicon mat.
  2. Place almonds in the TM bowl and grind on speed 9 for 10 seconds.
  3. Add oil and mix on speed 9 for 10 seconds.
  4. Add sugar, egg (or soaked chia seeds), baking soda and salt and mix on speed 4 for 10 seconds.
  5. Add chocolate and mix on speed 4 for 4 seconds.
  6. Spoon tablespoon sized balls onto the tray and allow room for spreading.
  7. Bake for 12 to 15 minutes or until browned.
  8. Cool on the tray for 5 to 10 minutes or until they are firm enough to transfer to a cooling rack.
Rapadura is unrefined sugar that still retains its nutrients.

Chia seed is fabulous superfood that is choc full of nutrients and when mixed with water becomes jelly like and wonderful as an ingredient binder.
